In the Oil Sands mining process, "middlings" refers to a pasty slurry with the consistency of yogurt found at the center of a primary separation vessel. As heavier rocks and sand settle at the bottom and lighter oil (air-entrained bitumen) rises, the middlings are carefully extracted for further processing.
